Good morning,
This week's dinner is a big pot of lentil and vegetable soup. It costs very little, it's ready in about 45 minutes, and it freezes well, so tonight's dinner can also be lunch on Tuesday and a freezer meal for a busy night later.
The recipe
Soften an onion, two carrots and two celery stalks in oil, add garlic and cumin, then a can of diced tomatoes, a cup and a half of rinsed lentils and eight cups of water or broth. Simmer about half an hour, stir in some greens, and finish with salt and a splash of vinegar.
This week's tip: the "eat first" shelf
Pick one shelf in the fridge for food that needs using in the next few days: half an onion, the last of the spinach, yesterday's rice. Check it before you plan dinner. It's one of the simplest ways to waste less.
Have a good week,
